Banana Bread Muffins

My mom just bought some bananas and suggested that i make muffins with them, so I said, "Okay."
So, while I'm making the muffins my mom walks by and asked what I'm making. I look at her and say, "I'm making muffins, why?" she looks at the bananas and says, "Oh, i thought you would wait for the to ripen." I look at her and say, "The are ripe." 


 "Your not going to taste the banana in them!!" She says walking away. 


They turned out GREAT!! So my mom says, "They're really good!!" 
I look at her and say, "THEY WERE RIPE!!"


Usually I ask my whole family what they think of it, and if its good, i might put it on my blog. I call it: 
FAMILY APPROVED
And if my family and I like it, I put it in this folder of where I put good recipes. 
I got this recipe from Girl Versus Dough


This muffin is more like bread, and I'm pretty sure thats why they call them Banana BREAD Muffins.
This has to be my favorite banana muffin. 


My mom and I...well now that I think about it...my whole family really likes recipes with brown sugar and a good amount of vanilla in them. 


I was going to add a chocolate glaze, but they were sweet enough.

Layla the Puppy

So, Scout my old dog died last December. :(
But a couple month later we got another puppy, Layla!! 
When we got her, she was SO tiny! Now that she's 6 months old she's REALLY big!! 
Last month I made this video:


She's alittle bit bigger now!! :) 


There's a picture of her I just recently took.
She's a really nice kind of carmel like color. 


When she was just a few months old she would start to step on her ears!! It would be so cute!!
Anyways, I just wanted to show you the puppy I have now!!

Chocolate Hazelnut Cupcakes

Sorry, I ment to post this a LONG time ago. I've just been real busy, but here it is!!




I hope you guys like it!!
I got this recipe in the Betty Crocker Best Cupcakes (May 2013) 


Recipe:

Cupcakes-
1 cup flour
1/2 teaspoon salt
1/4 cup butter, softened
1/2 cup sugar
1 teaspoon vanilla
1/2 teaspoon almond extract 
1 1/2 cups chocolate hazelnut spread (16 oz.)*
4 eggs
1/2 cup milk 

Ganache-
6 oz. semisweet choco. chips (1 cup)
3 tablespoons buter
4 teaspoons light corn syrup
1/4 tea. vanilla

1.) Heat oven to 350 and place paper liners in each 24 regular sized muffin tin. In a small bowl, stir together flour and salt, set a side.
2.) With a electric mixer, beat butter on medium speed until creamy. Add sugar, vanilla, and almond extract and beat in-till light and fluffy. Add hazelnut spread; beat until well blended, scrap bowl occasionally. Add eggs; beat until smooth. Add about half of the flour mixture; beat low speed until mixed. Spoon mixture in to muffin pan, evenly, half way.
3.) Bake 20-25 min or until set. Let cool, about 30 min. 
4.) Meanwhile, in a small microwavable bowl combine choco. chips, butter, and corn syrup. Microwave on high 1 min - 1 1/2 min, stir every 30 sec, until melted. Stir in vanilla. Top it on cooled cupcakes and enjoy!! 

*I know this is a lot of hazelnut spread but it makes it sweet*

A Surprise Inside! 

Hello!!
So i made these cupcakes, right?
So I wanted to make cupcakes, cause I haven't made cupcakes in FOREVER!
So my mom was looking through her cooking binders. She found a slip with a GREAT idea!
It said to add a piece of chocolate candy and add it in to any cupcake recipe.
As you see I added snickers and crunch.  
I made a simple chocolate butter cream frosting recipe from Bakerella's original book. 
I forgot how many cupcake's the recipe made, but I think it was around 27-30 cupcakes. 
The icing recipe covered most of the cupcakes. 


Martha Stewart's Chocolate Cake

  • 1 1/2 cups unsweetened cocoa powder
  • 1 1/2 teaspoons salt
  • 3 cups all-purpose flour
  • 1 tablespoon baking soda
  • 3/4 cup vegetable oil
  • 1 1/2 cups buttermilk
  • 3 cups sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 3 large eggs, lightly beaten
  • 1 1/2 cups hot water


  1. Preheat oven to 350 degrees. Line the muffin tins with cupcake papers or spray with cooking spray.
  2. Sift cocoa, flour, baking soda, baking powder, salt, and sugar into bowl. Beat in oil, buttermilk, vanilla, eggs, and hot water one at a time, using a mixer set at low. Beat until smooth, about 2 minutes.
  3. Pour batter into pans. Bake 45 to 55 minutes, or until a toothpick inserted into the centers comes out clean; an adult should rotate the pans halfway through and remove cupcakes from the oven.
  4. Let cakes cool in pans on wire racks, 20 minutes, before frosting the cupcakes. 

Bakerella's Chocolate Butter Cream


3/4 cup butter, softened
1 teaspoon vanilla extract 
3 cups powdered sugar 
1/3 cup cocoa powder
1 to 2 teaspoons milk, if needed

1. Cream the butter and vanilla with a mixer
2. Add the powdered sugar to your butter mixture, add the sugar in batches
3. Then add your cocoa powder, add milk to make creamier.

Christmas!

Hello, I hope you had a great holiday! 
Since I have not posted any thing in the past 2 or so weeks I am making a video. I got a HD Samsung Video Camera and I LOVE  it. I am going to make a video on my personal favorite, Chocolate Chip Cookies! YUM! So hopefully the video will be up by Monday. :D
