Recipe Time!!

Ok, so I am going to try to post a recipe every Friday (if I can). I am going to try to post a recipe I have made already, but most of them will just be a recipe I found in a book in my house (My mom and I have lots of cook books!).This sounds very interesting so lets get started:

Mocha Mini Cupcakes

You will need:
6 tbs butter, softened
1/2 cups sugar
1 tbs cocoa
1/3 cups milk
1 teaspoon coffee
1 cup of self-raising flour
Topping:
6 tbs butter, softened
1 teaspoon coffee
1 cup confectioner's sugar

Directions:
  1. Preheat oven to 360 F. Line a 24 mini cupcake pan papers (Or spray it). In a medium sized bowl, use a electric mixer on high speed to cream butter and sugar until light and fluffy. Add the egg and mix well.
  2. Add flour, cocoa, milk and coffee and beat with a mixer on medium until well combined.
 3. Divid the mixture evenly between the 24 mini cupcake papers. Bake for 10-15 minutes until well risen and firm to the touch. Allow them to cool before frosting.

Topping:
  1. Use a electric mixer on high speed to beat the butter and coffee until light and fluffy. Gradually beat in confectioner's sugar until all combined, continue beating for 1 min
Tips:
How to make self-raising flour:
1. Get 1 cup of all-purpose flour and add 1 1/2 teaspoon of baking powder and not over 1 teaspoon of salt
